We all love delicious things. We don’t all know how to get these without loading ourselves full of additives and artificial sweeteners. Enter Jo. This Pilates teaching chef and nutritionist knows her stuff. She has just published a shiny new cookery book, advising us on how to create tasty and healthy meals. And the good news? Chocolate cake is still on the menu.

Ingredients
300g Beetroot
130g date puree
4 eggs
4 tbsp cocunut oil or extra virgin olive oil
80g cocoa powder
150g ground almonds
4 tbsp agave syrup or honey
1 1/2 tsp baking soda
1/2 tsp cardamom or vanilla powder
Method
- Steam or boil the beetroot and blend to purée
- Preheat oven to 170 degrees Celsius
- In a bowl combine beetroot, date puree, eggs, coconut oil and agave syrip and mix well
- Add ground almonds, cocoa powder, cardamom or vanilla powder, baking soda and mix
- Put mixture in muffin tins and bake in the oven for 25 minutes
