Detailed course itinerary
This informal and relaxed Italian cooking course is ideal for both ‘good’ and ‘bad’ cooks everywhere who want to achieve the fabled status of a becoming a genuine chef.
You will learn from an expert chef how to cook delicious Italian food including learning how to prepare and cook typical Neapolitan and Mediterranean specialities, including making pastry.
This cooking class is part hands-on, part demonstration, part note taking and part eating the Italian food you have prepared and each day the menu will change allowing you to expand your skills.
This school focuses on simple, healthy Italian food using vegetables and herbs grown in the school’s gardens.

- All classes are taught in both Italian and English
Class Start Days and Schedule
- Classes run on selected dates throughout the year
- You will have 2 consecutive days of classes that last 3 hours each day
- This course is part hands-on, part demonstration, part note taking and part tasting and eating the food

About Your Chefs
- Head chef Biagio worked in a number of different Italian restaurants worldwide before setting up this cooking school in the early 1990's
- This is a truly family business and Biagio's son Agostino also teaches guests how to cook with his own sense of fun and charm as he teaches you how to practically recreate the dishes once you head home
- Depending on the size of the group, you'll be taught by either Biagio or Agostino or if you are lucky, both of them!
- Palmeira is also on hand to assist in the kitchen and to guide you through each lesson
What Will I Learn?
- Each day you will learn how to prepare a different full Italian meal
- The focus on the classes will be on simple food from the Neapolitan and Mediterranean regions and you'll be learning to cook food that will be enjoyed by all of the cooking class as well as the guests of the on-site bed and breakfast so you can bask in the delight of others sampling your food
- How to select fresh, seasonal produce
- Techniques for dressing the plates
- Making fresh dough for pasta, pizza and bread
- How to create a delicate pastry
