Steeped in natural beauty, Mazzano with its clean environment is a popular retreat for many Roman families looking to escape the hustle and bustle of Rome’s city center.
Under the guidance of your fun and friendly Italian Chef Fabio, who is passionate about Italian cooking, you will immerse yourself in Italian life to discover the gastronomic delights of Rome.
The aim of the cookery course is to give you the techniques needed to cook that will give you the skills to make and cook delicious dishes to impress your friends back home.
Chef Fabio will take you on a walking tour of Mazzano and the food market before heading to his wonderful cooking school and restaurant to start cooking.
Discover an altogether different side of Rome as you escape the city for an indulgence in the food and wine from the region that promises not just a culinary but also a cultural experience.

- Minimum age: 10 (children under 18 must be accompanied by an adult)
- This cooking course runs for a minimum of 2 people, and solo travellers are welcome to join an existing group
Italian Cookery Course Start Days
- This cookery course in Mazzano runs on set dates year round
- The day starts at 8.30am with a transfer from central Rome to Mazzano and ends around 3pm after you’ve eaten lunch when you’ll be driven back to Rome arriving between 3.30pm and 4pm (depending on the traffic)
Cooking Course Itinerary
- You’ll be met in from of the Regis Hotel in Rome at 8.30am for the drive to the medieval village of Mazzano (30mins-1 hour drive depending on the traffic)
- After arrival in Mazzano, Chef Fabio will take you on a walking tour so you can appreciate the beauty of the village and see where the local Roman city dwellers escape
- After your walk, you’ll head back to the cooking school to start your cookery lesson which lasts for around 3-4 hours after which you’ll sit down together and eat the delicious meal you’ve learned to cook accompanied by local wines from the region finishing about 3pm in the afternoon
- After you’ve eaten, you’ll be driven back to the centre of Rome, with new skills and knowledge that will stay with you long after the holiday is over
What Will I Learn?
- During your walking tour, you’ll discover more about the local food shops, market and history of Mazzano seeing life through a local’s eyes
- Cooking courses concentrate on techniques and skills to make fresh, seasonal Italian dishes and rather than focusing on working from a recipe, Chef Fabio will give you the confidence to create your own dishes for a typical Italian menu from anti pasta to dessert
- At the start of your day, Fabio will discuss his ideas for the day’s cooking and what you will cover during your one day cooking course

Dishes vary according to the season and what food is available but may include:
- Carpaccio di capesante alla vaniglia
- Insalada di polop (octopus salad)
- Risotto zafferanato
- Pollo ruspante di fattoria arrositio
- Bruchetta
- Pasta with ragu
- Gnocchi with gorgonzola cheese sauce
- Pumpkin ravioli
- Involtini di melanzane
- Mousse al cocco
- Tortino di cioccolato
- Local wines are carefully chosen to accompany the food you’ve learned to cook
- Dietary requests can be catered for including vegetarians if advised at the time of booking
About Your Chef
- Fun and friendly Chef Fabio is passionate about cooking and he’ll teach you to cook as a friend rather than a tourist passing on his skills
- Fabio was born in Rome and became a lawyer but quickly realised his true passion was cooking
- He then pursued his dream by taking a cooking course in Paris at Ritz Escoffier cooking school and after graduating came back to Rome to open a series of restaurants
- Fabio then decided to transform his property in the countryside of Mazzano Romano into a cooking school that teaches Italian cuisine not only recipes but culinary secrets to give you a deep insight into Italian food to take you on a culinary and cultural journey
- Please note that in the rare event that Fabio is unavailable your class will be taken by another of the school's equally amazing and knowledgeable chefs
